Salted Caramel Shortbread Cookies

Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes

Makes: 2 dozen cookies


  • 1 cup butter, room temperature

  • 1/2 cup granulated sugar

  • 1/3 cup toffee, crushed

  • 2 1/3 cup flour

  • 1/4 tsp salt

  • 1/2 tsp sea salt (for top)


  1. In a large bowl, cream together butter, granulated sugar, and toffee (which should be almost as fine as the sugar).

  2. Mix in the flour and salt in two batches. Mix until flour is completely incorporated.

  3. Chill the dough for at least 1 hour in the fridge.

  4. When ready to bake, preheat oven to 350 degrees. Roll out dough to about 1/4 inch thick and cut into desired shape.

  5. Sprinkle the sea salt over top of the cookies.

  6. Bake for 15-17 minutes, or until lightly golden brown.

  7. Let cool for at least 5 minutes.
