Salted Caramel Shortbread Cookies
Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes
Makes: 2 dozen cookies
Ingredients
- 1 cup butter, room temperature 
- 1/2 cup granulated sugar 
- 1/3 cup toffee, crushed 
- 2 1/3 cup flour 
- 1/4 tsp salt 
- 1/2 tsp sea salt (for top) 
Instructions
- In a large bowl, cream together butter, granulated sugar, and toffee (which should be almost as fine as the sugar). 
- Mix in the flour and salt in two batches. Mix until flour is completely incorporated. 
- Chill the dough for at least 1 hour in the fridge. 
- When ready to bake, preheat oven to 350 degrees. Roll out dough to about 1/4 inch thick and cut into desired shape. 
- Sprinkle the sea salt over top of the cookies. 
- Bake for 15-17 minutes, or until lightly golden brown.
