Roasted Tahini Cauliflower


  • 1 head cauliflower, chopped into bite sized pieces

  • 3 tbsp tahini

  • juice of 1/2 lemon

  • 2 cloves of garlic, minced

  • 1 tbp parsley, chopped

  • 1/2 tsp paprika

  • 1/4 tsp smoked paprika

  • 1/4 tsp sumac (optional)

  • 1/4 tsp salt (or to taste)

  • 1/4 tsp pepper (or to taste)


  1. Preheat oven to 400 degrees. Line a baking sheet with tin foil and place in the oven while it comes to temperature.

  2. In a large bowl, mix together the tahini, lemon juice, garlic, parley, paprika, smoked paprika, sumac, salt, and pepper. Add cauliflower and toss to coat.

  3. Remove baking sheet from oven, and while it's hot, add the cauliflower to the sheet and spread out into an even layer. Roast in the oven for 15 to 20 minutes, or until cauliflower is tender and starting to caramelize.

  4. Serve immediately.
