One Bowl Chocolate Zucchini Bread

Zucchini bread is one of my favorite quick breads to make because it’s made with vegetables and makes me feel like I’m eating something healthy! But it also happens to be delicious!

This chocolate zucchini bread is absolutely no exception!

If you have kids (or a husband) that refuse to eat anything green, boy is this recipe going to be your best friend! It’s almost like eating chocolate cake. But instead it’s a chocolate cake that is packed with zucchini!

How to Make It

Did I mention it’s also really easy to make? So easy you can pretty much make it in one bowl.

This is also a great recipe to make if you have a left over zucchini (like I did) because you probably have everything else you need in your pantry and fridge.

The bread is made with flour (you can use all purpose or whole wheat), sugar, cocoa powder, baking soda, baking powder, eggs, sour cream or Greek yogurt, butter, zucchini, and chocolate chips (if you want even more chocolateiness).


First, whisk the dry ingredients together to that there are no clumps left.

Then, mix all the wet ingredients together in one measuring cup so that they are well combined. It may take a little more effort to stir in the eggs.

Pour the wet ingredients into the dry and stir to combine. This mixture will be pretty dry until you add the zucchini. Once you mix in the zucchini, the batter will start to come together beautifully.

Finally, fold in the chocolate chips if you choose to use them then transfer the batter to a loaf pan lines with parchment. Bake at 350 for 15 minutes, then reduce the temp to 325 and continue to bake for another 25-30 minutes, until a toothpick inserted into the center comes out clean.

Let the bread cool completely before attempting to slice it. Otherwise, it will just fall apart.

But once it’s ready, this chocolate zucchini bread makes a wonderful breakfast, snack, or dessert! Like I said, it’s like eating chocolate cake and there is no wrong time to eat chocolate cake in my book!

Recipe and Tools

Prep Time: 15 minutes Cook Time: 45-50 minutes Total Time: 1 hour 5 minutes

Makes 1 loaf

Ingredients:

  • 1 3/4 cup all purpose flour

  • 3/4 cup granulated sugar

  • 1/2 cup cocoa powder

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 cup zucchini, grated

  • 1/2 cup butter, melted

  • 1/4 cup sour cream (or Greek yogurt)

  • 2 eggs

  • 1 cup chocolate chips (optional)

Instructions:

  1. Preheat oven to 350 degrees. Line a loaf pan with parchment paper.

  2. In a large bowl, whisk together flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.

  3. In a separate bowl or measuring cup, mix together butter, sour cream, and eggs until well combined.

  4. Pour wet ingredients into dry ingredients and gently mix to barely combine. Then add in zucchini and continue to mix until the batter is well combined and there are no more pockets of flour.

  5. Fold in chocolate chips. Transfer the batter to the loaf pan and bake for 15 minutes. Reduce temperature to 325 and continue to bake for 30 to 35 minutes, or until a toothpick comes out clean.

  6. Let cool completely before slicing. Keep covered or wrapped between serving.
